This remarkable baby eggplant has a spherical shape and is white or may be a very light whitish-green. Baby white eggplant has a firmer texture than most and a mild subtle flavor.

Eggplant is excellent baked, breaded and fried, saut�ed, braised and steamed. Perfect for eggplant rolls, the skin may be removed if desired. Usually very young fresh baby eggplants do not require peeling but may be carefully peeled with a paring knife or a potato peeler if desired. Eggplant loves the company of other vegetables. Enhance flavor with chili powder, oregano, thyme, allspice, basil and sage. To store, place in an unsealed plastic bag; refrigerate. Use within five days for optimum quality.
