Quite unusual-looking and having a rather ominous sounding name, Dragon Tongue beans have a yellow background with distinct purple streaks and flecks. About four to five inches in length, this attractive eye-catching bean is much wider and flatter than the traditional green bean. Its colorful pod is exceptionally tender and edible. Offering a sweet tenderness and juiciness when enjoyed raw, dragon tongue beans are prized for being an all-purpose bean. They may be used as fresh snap beans when very young and as shelled beans when fully mature.

Storage Temperature
To store, refrigerate shelling peas in a perforated plastic bag to allow air flow. For optimum quality, use within one week. Pods may begin to turn black or develop spotting but the beans inside will not be affected.

Nutritional Facts

Beans contain anemia-fighting iron, a trace of potassium, vitamin B and generous amounts of minerals. Beans are an excellent nutritious dietary choice for pregnant women. One-half cup of beans provides one-third of the daily requirement of folate. Eating five daily servings of vegetables and fruits lowers the chances of cancer. A recent study found that eating nine or ten daily servings of vegetables and fruits, combined with three servings of low-fat dairy products, were effective in lowering blood pressure. NOTE: Shelling beans MUST be cooked and should not be eaten raw as the human body cannot digest the raw beans. Heat and cooking only deactivates the toxin present in the raw beans and does not break it down. However, the deactivated toxin passes through our bodies and is not harmful.
